This edible herb is native to Central and South America and has been used as a seasoning in cooking for centuries. Aztecs, Mayáns and other native cultures used it as an culinary and medicinal herb. It is high in antioxidants and vitamins A and C, calcium, magnesium, potassium, iron and is said to aid digestion, promote heart health, and support the immune system. It is often added to stews and soups, served fresh in salads, sandwiches, tacos, and as a garnish in soups and other dishes. The flavor has strong citrus flavors mixed with the herbal notes of cilantro and parsley and peppery, arugula-like undertones. When harvesting pick leaves from the upper part of the plant for the best flavors. Store refrigerated in an airtight container for up to two weeks. Freeze leaves to extend the harvest.
