This Chile originated in Mexico and is used in many traditional dishes. The name translates to “tree-chili” in reference to how the peppers grow on the branches of the plant. The long, tapered peppers reach 3-4 inch long, start green and turn red at maturity. They have a distinctive nutty, smoky flavor that adds depth to dishes or provides heat to any dish you want to turn up the temperature on. The long-tapered peppers are most commonly used fresh in sauces, but they can be dried and ground for preservation. They keep their color when dried and can be strung together and used as an attractive decoration.

Chef Jeff’s Tip: When harvesting these peppers, always wear gloves and be sure to wash your hands immediately after handling them.
